Easter bunny rolls (vegan)

Oh Easter, the season of bunnies….possibly one of my most favorite holidays…partially because I like bunnies of course. I decided to make these Easter bunny rolls because mother deer wanted something seeded and not too sweet. Of course, you don’t have to add in the seeds/oats like I did because I understand not everyone likes that type of thing. So, you’re always welcome to substitute them for chocolate chips (yums) or dried fruits (even more yums)!

Ingredients (makes 10):

2 teaspoons yeast
1 1/2 tablespoons oil
1 cup milk
1/3 cup water
1 1/2 tablespoons sugar
1/2 teaspoon salt
1/3 cup oats
3 cups whole wheat flour
3 tablespoons sunflower seeds
1 tablespoon poppy seeds

Hop on over to the kitchen!

1. Combine the yeast, warm milk and sugar in a measuring cup; set aside to foam. In a large bowl sift together the flour, oats and salt.

2. Add the yeast mixture, seeds and water to the large bowl. Stir everything together until a dough forms. Knead the dough for 10-13 minutes until elastic then cover with a tea towel and let rise in a warm place for 1 hour.

3. When the dough is ready, divide it into 10 even pieces. Roll each into 20″ long ropes. Cut the role into one 10″ piece (body), one 5″ piece (head), two 2″ pieces (ears) and one 1″ piece (tail).

4. Coil the 10″ and 5″ pieces into a swirls. Attach everything together to form a bunny. Let the buns rise covered for 30 minutes.

5. Bake at 375F for 10 – 13 minutes until golden.
