Salsa (clean eats)

It’s snack time and there’s nothing I love more than a nice bowl of fresh salsa to go with my veggies. Some people like to eat their vegetables with hummus or salad dressing but I like to have mine with salsa because it gives me an extra helping of veggie goodness!

Fresh Salsa

Plus lil’ bun isn’t a fan of hummus but she loves her salsa so it lets me make sure she gets her daily dose of vegetables for her day as well. Like most kids, she’s not a huge fan of veggies either but by presenting them to her in fun ways she’s more inclined to eat them. As a matter of fact, there’s been studies done showing that kids are more likely to eat their vegetables if they are presented in fun ways and they help out in the process of making them.

Simple. Clean. Ingredients:

1 tomato (vine ripe ones work best!)
1/4 red onion
1/4 cup cilantro
juice of 1/2 lime
chili peppers and seasonings to taste

Method

1. Dice the tomato, red onion and cilantro depending on how chunky or fine you like your salsa.

2. Add in the lime juice and seasonings. 

3. Enjoy with HEALTHY tortilla chips, baked pita chips, crackers, or in a sandwich/wrap! If you’re a veggie monster like me, eat them on cucumber slices like bruschetta!
