Tofu “gratin” (clean eats)

I always try to make a healthier alternative to what I crave and eat it BEFORE going out to get a real thing. Sometimes it works sometimes it doesn’t but it’s nice to try. Lately it’s been gratin. I’ve never had gratin before in my life so I don’t know how this came about but here I was craving gratin. Now I can’t have cheese and I have yet to find a melty cheese on the market so here I was attempting to make one with tofu. Surprisingly my tofu gratin turned out pretty good. Not any real substitute by any means but it was a nice way to get some protein in.

Tofu "gratin"

Simple. Clean. Ingredients.

1 carrot sliced into strips
1/4 cup corn nibbles
85g silken tofu
1 egg
2 tablespoons broth or water
1/3 cup shredded cheese (optional)
salt and pepper to taste

Note: I didn’t use cheese on mine because I personally don’t like cheese but feel free to add it to yours!

Cooking time

1. Prep the veggies and place them into an oven safe bowl.

2. Mash the tofu. Then stir in your egg, broth and seasonings. Pour tofu mixture on top of the veggies and top if cheese (if using)

3. Bake at 350F for 10 – 15 minutes until the cheese melts or the tofu topping feels firm. Munch your tofu gratin!
