Zaru soba or zaru udon (gluten free, vegan)

Zaru soba is one of my most favorite Japanese dishes and I like to order it at restaurants a lot. But for some reason it’s quite the pricy dish to order especially for something that doesn’t come with any proteins or veggies so I finally decided that it was time to make it for myself at home! I mean I already had all the ingredients in my pantry so I figured why not right? Plus it’s super easy to prepare ahead of time and eat at a later time because it needs to be put in the fridge to be chilled anyways (:

Homemade Zaru soba

Ingredients: (makes 2 servings)

2 bundles of soba (buckwheat noodles) or udon noodles
2 tablespoons nori flakes
1 spring onions sliced thin
raw egg, wasabi, pickled ginger (optional)  

Dipping Sauce

1 cup water
2 tablespoons light soy sauce
1 tablespoon mirin
1 teaspoon dashi powder

Cook away

1. Get your soba or udon noodles ready.  

2. Prepare your noodles by boiling them in hot water  

3. Strain your soba noodles through a sieve and rinse them with cold running water  

How to make Zaru soba

4. Place the soba noodles in a bowl of cold water and place it in the fridge until it’s time to eat to help it stay chilled.  

5. Combine all the dipping sauce ingredients in a sauce pan and let the mixture simmer for a minute. Then let it cool in the fridge until it’s time to eat.  

6. When you’re ready to eat the soba, strain the noodles through a sieve to get rid of the excess water. Top the noodles with the nori flakes. Then put some of the green onion in your dipping sauce.

  7. Munch with a side of wasabi and pickled ginger by dipping the soba noodles in the dipping sauce (:

  1. Can’t wait to try it without egg and using a vegan dashi, ie. not containing benito.
    Because you list it as vegan I think you should mention that not all dashi is vegan.
