Sushi rolls and salad rolls (clean eats)

I LOVE my Sushi rolls and salad rolls and even though they’re super easy to make at home, I’ve never really took the time to do so. Lil’ bun was craving sushi so I figured that it was about time that I start making them at home again. She likes sushi better but I enjoy my salad rolls more because I find them to be more portable and I have them less often so when I do get to eat them, they feel like a rare treat. Anyways, the thing we adore most about sushi and salad rolls at home is that you can customize and put anything to your liking in them.

Lil’ bun’s favorite thing to put in her sushi is avocado, carrot, pork fluff, imitation crab, egg and cucumber. I on the otherhand don’t mind so much what’s in my salad roll as long as it’s packed full of yummy veggies. Actually, I really like putting basil in my salad rolls but I may have recently gone a tad crazy on my little basil plant so I decided to do without and let the poor little guy grow out some more.

Clean. Simple. Ingredients.

  • cooked quinoa or brown rice
  • thinly sliced vegetables (cucumber, carrot, bell pepper, avocado etc.)
  • protein if you like (tuna, sliced tofu, ham, egg, imitation crab, etc.)
  • large sheets of seaweed laver or rice paper wrap

Salad roll

Fill a large bowl with warm water and place your rice paper wrap in it for about 10 seconds until it softens. Spread some quinoa/brown rice along one of the edges making sure to leave 2″ of space in between the quinoa and the edge of the circle.  Place some of your fillings beside the quinoa. Carefully fold the excess 2″ of rice wrap over your quinoa and fillings. Then, fold in the two vertical sides before rolling it up to the end. Enjoy plain or with preferred dipping sauces!

Sushi roll

Take a piece of seaweed laver and spread some quinoa/brown rice along the edge of it width-wise. Add in some of your fillings and tightly roll it up until you’re 2″ away from the end of the laver. Dip your fingers in some water and dab it on the unwrapped portion of the laver before rolling up the rest of it. Cut your roll into pieces and enjoy plain or with preferred dipping sauces!
