Roasted edamame (clean eats/vegan)

Some people crave sweet, some people crave salty, but me? I crave crunchy. I don’t know why it is but I always feel the need to crunch on something. And when it happens, I try my best to go with the healthiest options possible. So I decided that I would roast edamame beans instead assuming that they wouldn’t take as long. Plus, having extra protein in a snack is never a bad thing especially if you’re me and stay away from most meats. Anyways, enough of my ramblings, here’s how these crunchy Roasted edamame turned out!

Roasted edamame

Simple. Clean. Ingredients.

2 cups edamame peas (shelled)
2 teaspoons oil of choice (i used coconut oil)
1/2 teaspoon salt

If you’re a fan of flavour packed snacks try using some of these savoury spices to spice up your edamame! Paprika, chili powder, ground pepper, garlic powder, Parmesan

Let’s get toastin:

1. Stir the oil, edamame peas and spices together in a bowl.

2. Transfer the seasoned peas onto a baking sheet. Bake the peas at 375F for 12 to 15 minutes until they brown.

3. Munch your Roasted edamame!
