One pot tomato rice (vegan)

I always see crock-pot recipes on the interweb but I don’t own a crock pot so I thought about it and realized that a rice cooker works similarly to a crock pot!

I mean, you put everything you want to cook in it, push a button, leave it alone, give it some time and voila it’s done!

Okay, maybe it doesn’t work exactly like a crock pot, but for what it’s worth, it works the same in the sense that you can just throw everything in and dinner’s ready in about an hour.

One pot tomato rice

Being that mother deer is out of kitchen commission for a while and I have what feels like a dozen papers to write, I decided to make this simple and delicious one pot tomato rice for dinner. And making it was literally as easy as 1, 2, 3!

One pot tomato rice recipe

1. Wash your rice and prep it for your rice cooker. Add in your tomatoes. At this point you can add in other veggies as well like carrots, celery, spinach, corn, edamame, etc. but I just felt like having tomatoes that day.

2. Press cook.

3. Mix everything together until incorporated

And…dinner is served!

See? I told you it was easy!

One pot meal tomato rice

Ingredients (serves 4):

1 1/2 cups brown rice (uncooked)
3 cups water or broth
1 large heirloom tomato or 3 roma tomatoes
1″ of ginger sliced

Method:

1. Wash your rice and prepare it for your rice cooker as you would do so normally.

2. Place a large tomato in the center or three medium ones in a triangle formation around the center. Add in your ginger.

3. Cook your rice.

4. Mash your tomato with a rice paddle and mix the tomato into your cooked rice.

5. Munch.

    I cook what I call “loaded rice” or “dirty rice” straight in the rice cooker. I’ve added chopped garlic, olives, capers. I do have a slow cooker though and they are great for large, cheap cuts of meat. I wouldn’t cook meat in my rice cooker.

    This looks fantastic! I’d try this with quinoa and some steamed veggies on the side! 🙂
