Omurice (clean eats)

Omurice has got to be one of my favorite Japanese entree style dishes because you get your protein, carbs and veggies all at once! For those who aren’t familiar with the dish, omurice is basically an omelette wrapped around a bed of fried rice! I don’t eat rice very often…which is a little odd for someone of Chinese heritage to say…so I used quinoa instead. Of course if quinoa isn’t your thing, rice works just as well!

Simple. Clean. Ingredients.

3/4 cup quinoa cooked
bunch of diced veggies and proteins of your choice
2 eggs
seasonings to taste

Sautee your veggies until golden brown. Stir in your quinoa and season to taste. Transfer your “fried rice” styled quinoa in an oval-shaped pile on a plate and then prepare your omelette. When your omelette is done, blanket it over your entire pile of quinoa.

And of course, omurice isn’t omurice without ketchup on top! Well, it my case it was hot sauce because I don’t like ketchup…but no matter the topping, it’ll be delish!
