Apricot bliss balls (vegan/clean eats)

Blissballs are an amazing way to satisfy your sweet tooth cravings as well as give you that extra boost of energy you need to fuel yourself during the day. They’re a little like energy bars in ball form because they’re primarily made out of dried fruit. I don’t have them too often but every now and then, I don’t mind having a couple as an on-the-go mid-day snack in between meals. These Apricot bliss balls are a great alternative to the typical bliss balls made with dates. I find these Apricot bliss balls to be less sweet and have a milder flavour.

Apricot bliss balls

All you need for this bliss ball recipe is three simple ingredients and a food processor or blender. I’ve made these with a blender before but I find it harder to pulse the mixture so I prefer using a food processor. I like to make them with almonds and walnuts but you can try using other nuts if you like!

Simple. Clean. Ingredients. (makes 8)

1/2 cup almonds
3/4 cup walnuts
3/4 cup dried apricots

Blend everything together in your blender or food processor

Scoop your mixture by the tablespoon and then roll them into balls. Then either munch them as is or roll them in toppings such as hemp seeds, flax seeds, almond flour, chia seeds, coconut flakes or whatever you fancy.
