Monkey bread (vegan)

After falling head over heels with the cinnamon-pull-apart-bread we made a while ago, lil’ bun and I decided to make pull-apart bread again but this time a monkey bread with cookie butter version! Originally Lil’ bun and I wanted to add sliced bananas into our cookie butter dessert loaf but brother deer isn’t a fan of bananas so we decided to leave them out. It’s really unfortunate we couldn’t add banana because it would of made it even better! Hmm…perhaps we could put sliced strawberries in it instead next time…that’d be pretty yum too!  

Monkey bread

Ingredients (1 loaf):

  • 1 1/3 cups warm milk
  • 2 1/2 tablespoons maple syrup
  • 2 1/2 teaspoons yeast
  • 4 cups whole wheat flour
  • 2 tablespoons ground flax seeds + 8 tablespoons water (or 2 eggs)
  • 1/2 teaspoons salt

1/4 cup jam or spread of choice (we used cookie butter)

Baking time!

  1. Combine the yeast, warm milk and maple syrup in a measuring cup; set aside to foam. In a large bowl sift together the flour, and salt.

  1. Add the yeast mixture to the large bowl. Stir everything together until a dough forms  
  2. Knead the dough for 10-13 minutes until elastic then cover with a tea towel and let rise in a warm place for 1 hour.

  1. Roll the dough out into a 1/2 cm thick rectangle. Cut the other rectangle into 36 squares. Take each square and place a teaspoon or two of jam/spread in the center of it. Pinch the edges together and roll it into a ball.

  1. Layer each filled dough ball into a loaf pan. Cover the pan and let it rise for 30 minutes.

6. Bake at 350F for 20 – 30 minutes until golden delicious.

As much as lil’ bun and I enjoyed making a new variation of the pull apart bread, we both agreed that our favorite would always be the original cinnamon brown sugar one we made.

I think that next time I’m going to add some caramelized apples in each dough puff and then roll them in cinnamon sugar to create a hybrid version and bring it up a notch in deliciousness. If you want to make it pizza monkey bread, you can always add dried herbs and parmesan cheese to the dough for an extra pizza-y touch and wrap pasta sauce/ham/cheese in the center.
