Japanese carrot ginger salad (clean eats/vegan)

I’ve always loved the salads they serve at Japanese restaurants because the salad dressing tastes amazingly fresh and tangy at the same time. Well, I’ve always been a sucker for sour vinegary tastes so maybe that’s why I love it so much. Anyways, after a few rounds of interweb searches and a few hit and misses in the kitchen, I finally came up with a perfect Japanese carrot ginger salad.

Japanese carrot ginger salad

Simple. Clean. Ingredients.

1 carrot
1/8 onion
1 1/2 cm ginger slice
1/4 cup rice vinegar
1 tablespoon sesame oil (or regular oil)
1/2 teaspoon miso paste
1 clove garlic
salt and pepper to taste

1. Blend all the ingredients together in a powerful blender or in a food processor

2. Munch on top of salad!

I actually ended up bringing a Japanese carrot ginger salad to school for lunch the next day because I loved how the salad dressing turned out so much. I think I’m going to make a bigger batch of this tomorrow and keep it in the fridge to use throughout the week. I’ll probably have to go through it quick though because natural foods tend to go bad faster than store bought stuff. But, that shouldn’t be a problem because I’ve been loving it so much. Yum! Hurray for clean DELICIOUS food and I hope you guys enjoy this as much as I do! (:
