Spinach salad (clean eats/vegan)

Spinach isn’t just for green juices, frittatas or banana mint chip ice-cream anymore, they’re for salads too! Spinach is a powerful veggie and they have a milder taste. This makes it easy to incorporate into food. Being that I’m low in iron, eating spinach that’s packed full of it really helps with that.

It’s also surprisingly high in protein for a vegetable so this veggie really helps me reach my protein requirements too! Besides being super high in iron, spinach is high in vitamin K, vitamin A, magnesium, folate, manganese, calcium, vitamin C, vitamin B2, phosphorus, niacin, selenium, vitamin E, zinc, potassium, and vitamin B6. More importantly, spinach is full of flavonoids that help protect the body from free radicals. Having protection against free radicals is important because it helps prevent the development of cancer. (:

Most of the time I eat a spinach salad for lunch because they’re easy to prep for school. My favorite toppings for my salads are sliced almonds, pumpkin seeds, and strawberries but when they’re not in season I use tomatoes (usually cherry) instead. I’m not a fan of cheese but sometimes when I know I’m low on calcium I’m sprinkle on a few pieces but no more than a tablespoon.
