Matcha chia pudding and overnight oats

One of my favorite breakfasts of all time has got to be chia pudding. Not only is it super easy to prep the night before but it’s also versitile. I like adding matcha to mine because it gives me a bit more of an antioxidant (and caffeine) boost.

The thing that thickens it up into a pudding are the ch-ch-chia seeds! So what’s the deal about chia? Chia seeds are amazing because they can absorb up to 12x their own weight. Yup those tiny little seeds can hold that much liquid! If that’s not incredible enough for you, they have 2x more protein than any other seed, have 5x the calcium of milk, 2x the potassium of bananas, 3x the antioxidants of blueberries, and 3x more iron than spinach! Now then, onto my favorite way to eat these little fellas.

Clean. Simple. Ingredients.

1 banana mashed
1 1/4 cup milk
2 tablespoons chia seeds
2 teaspoon matcha

Method

Put all the ingredients into a jar and mix it all up until incorporated. Then, pop it in your fridge overnight and enjoy in the morning for breakfast (:

For a heartier breakfast you can always add in 1/2 cup of oatmeal and turn them into overnight oats! If you’re into dried fruits, nuts and seeds, you can always add those into the “pudding” to customize it to your liking. That’s why these puddings are so amazing, you can add whatever you want to them depending on what you’re craving (as long as they’re clean eats of course)!
