Hello hello! Long time no blog.

It feels so strange to finally been blogging after having a 2 week absence but life’s been busy lately and I’m just starting to get used to my new schedule. I feel like I said that the last time I blogged but the teaching life is constantly changing and no day is the same!

I’ve recently become gluten-free due to sensitivities and I’ve been really trying to explore gluten free options. I recently began experimenting with rice flour and ended up creating these chewy black sesame cookies.

Black sesame cookies recipe

Black sesame cookies (gluten free, vegan)
 
Recipe Type: Cookies
Serves: 8 – 10 medium cookies
These gluten free black sesame cookies are soft, chewy and nutty all at the same time. They’re perfect with a cup of tea but I like it best with a glass of coconut milk.
Ingredients
  • 2/3 cup rice flour
  • 2 tablespoons ground black sesame
  • 1 1/2 tablespoons sesame seeds
  • 1 tablespoon cornstarch
  • 3 tablespoons honey
  • 1 teaspoon vanilla
  • 2 tablespoons water
Instructions
  1. Combine the rice flour, ground black sesame powder, sesame seeds, honey, cornstarch and vanilla in a large bowl.
  2. Add in the water. If a dough doesn’t come together, add more by the teaspoon.
  3. Spoon cookie batter onto a lined baking sheet by the tablespoon
  4. Bake at 325F for 13 – 18 minutes until golden brown.
  5. Allow cookies to cool before removing so that they set.

  2. I like that these are not too sweet. They probably wouldn’t produce the same sugar rush that regular cookies do. Happy experimenting. I hope you are feeling better without gluten in your life.

  4. I love the originality of this gluten-free recipe with the ground black sesame seeds. I do have some in my pantry, and might just give these a try. I made some very good gluten free ginger snaps with chickpea flour – even better than the ‘regular’.

      Wow I’ve never heard of using chickpea flour before but those sound like some protein packed ginger snaps!
