Figs have been our recent obsession because our neighbours have been giving them to us like no tomorrow! Old Bean has also been really proud of his little fig tree this year and reaped some of its rewards this year too. Since we’ve been getting so many figs, we decided to make Walnut Fig Muffins wth them!

If you love banana nut muffins, you’ll love these Walnut Fig Muffins! The figs add the perfect amount of sweetness to the muffins and help retain moisture to keep them moist! They started off as a bit of an experiment between Mother Deer and I but they turned out marvellously!

These muffins are made with simple ingredients and pack a flavourful punch! The addition of brown sugar and butter is what made these muffins ever so addicting! The combination of these two ingredients made it taste as though we used brown butter without actually doing so.

How did we manage to do this? By using melted butter and mixing it in with the brown sugar when it was cooled. This also helped create the perfect caramel flavour to pair with the sweetness of the figs and crunch of the walnuts!

For this recipe, I recommend using figs that are not fully ripe. This helps them stay in one piece when you mix the figs into the batter. Alternatively, if you have riper figs, you can opt to not mix the figs into the batter and sprinkle them in while you are filling the muffin tins instead.
