Pumpkin chocolate chip oat bars (vegan friendly)

Now that exam season is over, I decided that it was about time I share this recipe! These pumpkin chocolate chip oat bars are the epitome of the Fall season and the oats keep them hearty which makes them perfect for breakfast!

I know I said that the pumpkin cranberry cake I made would be the last pumpkin recipe for the year but silly me found a can of pumpkin puree at the back of my pantry the other day and figured that I should probably put it to good use!

By now I pretty much ran out of pumpkin treats to make because I’ve made just about everything this year. I mean I’ve already done the coffee cake, the muffins, the cookies, the pies, the buns, and the breakfasts.

What else was there to make?

The BARS! I forgot the bars!

And thus, these chewy pumpkin chocolate chip oat bars were born.

These were a little experimental for me because I rarely ever make bars of any sort but I did some adapting off of a trusty brownie recipe and (surprisingly), they turned out great!

As a matter of fact, even mother deer who isn’t a fan of sweet treats came back for seconds!

Yeup they were mom’s seal of approval good. That’s how amazing they were.

Pumpkin chocolate chip oat bars recipe

Ingredients (makes 12)

  • 1 1/4 cup whole wheat flour (all purpose works as well)
  • 2 teaspoons pumpkin spice
  • 1/8 teaspoon salt
  • 1/2 cup oil
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 3/4 cup pumpkin puree
  • 1 teaspoon vanilla
  • 1 egg (or 1 tablespoon flax meal + 3 tablespoons water)
  • 2/3 cup oats
  • 3/4 cup dark chocolate chips

Method

  1. Whisk the oil, brown sugar, sugar, pumpkin puree, vanilla and the egg together in a large bowl.
  2. Sift in the whole wheat flour, pumpkin spice and salt.
  3. Fold in the oats and chocolate chips.
  4. Bake on a lined 6″ x 8″ baking pan for 20 – 25 minutes or until a toothpick comes out clean when inserted into the middle.
