Oatmeal raisin cookies (vegan friendly)

Now I don’t know about you but, I love me some oatmeal raisin cookies. There’s just something so cozy about oatmeal that makes it so addicting to me. Especially when it’s getting colder out as we transition into the winter time.

As a matter of fact, if I was forced to choose one type of cookie to eat for the rest of my life, without a doubt, it would have to be oatmeal raisin.

It just never fails to satisfy my sweet tooth and having the oatmeal in there tricks me into thinking that I’m actually having something healthy 🙂

Another thing I adore about oatmeal cookies is how versatile they are in nature. That means you can throw any add-ins you want and it’ll still turn out delicious!

Sometimes we end up throwing everything but the kitchen sink into the dough and other times, we choose to stick closer to the classic nature of the cookies by just adding in sweet golden raisins with a sprinkle of tart dried cranberries for balance

Oatmeal raisin cookies recipe

Oatmeal raisin cookies recipe

Ingredients (makes 12):

1/3 cup brown sugar
1/3 cup oil
1 egg (or 1 tablespoon ground flax + 3 tablespoons water)
1 teaspoon vanilla
3/4 cup whole wheat flour (feel free to use all purpose)
1 teaspoon cornstarch
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 1/3 cup oats
2/3 cup raisins (or add-ins of your choice)

Method

  1. Stir your brown sugar, sugar and oil together in a large bowl until combined. Whisk in the egg and vanilla.
  2. Sift in the whole wheat flour, cornstarch, baking soda, baking powder, cinnamon and salt. Mix everything together until a dough comes together.
  3. Fold in the oats and raisins (or your add-ins of choice)
  4. Bake at 375F for 8 – 10 minutes until the bottoms are golden brown
  5. Let cool for 5 minutes before munching!

    Great recipe to share – I love each ingredient so I know I would enjoy your cookies. I have never made them but I love dried cherries or cranberries in cookies. The flavor really comes through. Thanks for bringing these to Angie’s party 🙂
