Gooey cinnamon buns (Cinnabon copycat)

I was browsing through my blog tags the other day and I realized that I have FOURTY-FIVE recipes with cinnamon in it!

Can you tell I really love my cinnamon?

And my favorite way to have it has to be in the form of Gooey cinnamon buns.

I mean, what could be better than sinking your teeth into a warm soft fluffy roll with swirls of sweet gooey cinnamon in the middle?

Nothing. Absolutely nothing.

ESPECIALLY, if it’s got a blanket of spiced glaze on top!

And nothing beats the smell of gooey cinnamon buns baking in the oven.

I swear those little guys were just taunting me from the oven…just creeping up higher and higher within the baking pan so that they could see my misery from afar.

But I was the one who got the last laugh because I got to take a big ol’ bite out (almost) each and every one of them 🙂

Sometimes I like to pretend I’m lady like and eat them with a fork. I end up doing that for a good two bites and then think to myself “oh who am I kidding” before diving into it face first.

Ingredients

  • 2 1/2 teaspoon active dry yeast
  • 1/2 cup warm milk of choice
  • 1 tablespoon sugar
  • 1 tablespoon oil
  • 2 teaspoons cinnamon
  • 1 1/2 cups bread flour (all purpose works as well)
  • pinch of salt
  • 2 tablespoons melted coconut oil
  • 2/3 cup brown sugar
  • 2 teaspoons cinnamon

glaze: 1 cup icing sugar, 1 teaspoon cinnamon, 1 tablespoon milk of choice

Method

  1. In a large bowl, combine the milk, yeast and brown sugar. Mix everything together and let it rest for 8 minutes until it begins to foam. Add in the oil.
  2. Sift in the salt, 1 teaspoon cinnamon and bread flour. Add in the yeast mixture and stir until a dough forms.
  3. Knead the dough for 15 – 20 minutes on a lightly floured surface until elastic. Return the dough into the large bowl and cover it with a tea towel. Place the dough in a warm place for 1 1/2 hours until it doubles in size.
  4. When the dough is ready, punch it down on a lightly floured surface.
  5. Roll the dough out into a rectangle and spread the melted coconut oil/butter on top. Then sprinkle on the cinnamon and brown sugar on top and roll it up into a log. Slice the log into 1″ thick slices for the buns. Let the rolls rise for 1 hour.
  6. When the buns have risen, bake them in the oven at 350F for 25 – 30 minutes until golden brown.

  1. I LOVE all of your cinnamon bun posts!!! I do the same thing- love something and have to keep trying a “new” one!! (I drive my family crazy!) As a HUGE cinnamon bun fan myself- these look AMAZING!! Thanks for bringing them to the party & Happy FF!! 🙂 Josette

    1. Hehehe. I think I have gotten my family accustomed to cinnamon by now 🙂 If they didn’t like it before, they sure do like it now!

    I’ve not checked my tags but I’ve probably even more than that haha! You can’t beat cinnamon though, it’s my favourite flavour and smell! And I agree, it’s best in cinnamon bun form – these look delicious!
