Blueberry cobbler (clean eats/vegan)

I’m absolutely in love with blueberries. Afterall, that’s why we have FOUR blueberry bushes in the garden and go blueberry picking in the summer. Oh and since we have so many blueberries in the summer, we like to freeze a BUNCH of them so we get to have them all year round (: This recipe is for a warm and cozy blueberry “cobbler” that’s also good for you! I noted that you can add in  additional honey/agave to the blueberries to add more sweetness if your blueberries aren’t in season or ripe. I usually do without it though because mine are already so sweet as is!

Blueberry cobbler

Even though blueberries are one of the smallest fruits out there, they pack one of the biggest punches when it comes to nutrition. As a matter of fact, they hold the title for having the HIGHEST amount of antioxidants for boosting up your immune system, reducing signs of aging and neutralizing free radicals that contribute to cancer. More specifically, blueberries are high in the antioxidant anthocyanin which helps promote brain and vision health. Oh and they’re also surprisingly high in fiber for a tiny little guy.

Simple. Clean. Ingredients.

2 teaspoon honey or agave (optional)
1/2 blueberries
1 tablespoon shredded coconut
1 1/2 tablespoon oats
1 teaspoon apple sauce or oil

Combine the shredded coconut, oats, and applesauce/oil; set aside. Cook the blueberries and honey/agave in a sauce pan until some of their juices cook out. Transfer the blueberry mixture into a ramekin and top with coconut mixture. Bake at 400F for 20 – 25 minutes until the blueberry cobbler is golden on top.
