Cinnamon pretzel bites

After a LONG LONG LONG break from making yeast breads, the time has finally come for me to reconnect with my dough baby. I was debating as to what I should make to kick start my yeast bread making and I thought that cinnamon pretzel bites would be the perfect things to make. I mean, they’re like little bites of joy and you can’t go wrong with that!

Making pretzels are like going to the beach?

Anyways like I mentioned, it’s been a while since I’ve made yeast breads let alone pretzels. I’ve only made pretzels once in my life and that was when I was making these adorable pretzel turtles.

But since I’ve made yeast dough like a million times before, I figured that making pretzels wouldn’t be a problem because the only difference between basic yeast breads and pretzels is the baking soda bath you have to put the dough in before baking them.

Yes. You heard me right. Your dough babies get to go for a swim before they go tanning in the oven.

Then after they get they’re tan on, they finally remember to put on tanning oil (or coconut oil in this case) and because they’re coated in oil, the sand (cinnamon sugar) gets stuck all over their delicious bodies to create a yummy irresistible looking morsel.

Haha, who would of thought that making pretzels would be like going out to the beach?

Cinnamon pretzel bites recipe

Ingredients

2 1/2 teaspoon active dry yeast
1/2 cup warm water
1 tablespoon brown sugar
1 tablespoon oil
1 teaspoon cinnamon
1 1/2 cups bread flour (all purpose works as well)
pinch of salt

1 teaspoon baking soda
3-5 cups hot water

1/3 cup coconut oil, margarine or butter (melted)
1/4 cup sugar + 2 teaspoons ground cinnamon

Method

  1. In a large bowl, combine the warm water, yeast and brown sugar. Mix everything together and let it rest for 8 minutes until it begins to foam. Add in the oil.
  2. Sift in the salt, 1 teaspoon cinnamon and bread flour. Add in the yeast mixture and stir until a dough forms.
  3. Knead the dough for 15 – 20 minutes on a lightly floured surface until elastic. Return the dough into the large bowl and cover it with a tea towel. Place the dough in a warm place for 1 1/2 hours until it doubles in size.
  4. When the dough is ready, punch it down on a lightly floured surface. Grab a handful of dough and roll it out into a 1″ round rope. Cut the rope into 1″ long bite size pieces. Continue with the rest of the dough.
  5. Pour the hot water and baking soda into a bowl. Drop 5 – 8 pieces of dough into the hot water at a time and let them float in the baking soda mixture for 15 seconds. Then, lift the pieces of dough out with a slotted spoon and let the excess water drain off. Transfer the pieces of dough onto a lined baking sheet. Continue until all the dough as been dipped in the water.
  6. Bake at 400F for 8 – 12 minutes until golden.7. Dip the pretzels into melted coconut oil/margarine/butter. Transfer the pretzel bites onto a cooling rack so that the excess coconut oil drains off. Roll the pretzel bites in the cinnamon sugar mixture.
