Chewiest Oatmeal Raisin Cookies

Social distancing and quarantine means more time for baking and trying new recipes! I’ve been trying to create the perfect chewy oatmeal raisin cookies for the longest time and I have finally made the perfect recipe! Not only are these the CHEWIEST oatmeal raisin cookies, but they are also vegan, gluten-free, and dairy-free!

The wholesome ingredients

I know that makes them sound insanely healthy but they are so delicious! Trust me, you wouldn’t be able to tell that they are secretly healthy!

They’re made with wholesome ingredients including coconut oil, oat flour, peanut butter, raisins and maple syrup!

The oat flour adds texture and works great as a flour replacement. It adds heartiness and warmth to the cookies which make them the perfect feel good cookie.

The peanut butter helps hold everything together but you can also use an egg instead if you’re not vegan or have a nut allergy.

Last but not least, the raisins and maple syrup add a natural sweetness to the cookies without making it overly so. There is also brown sugar to create that chewy texture!

Chewiest Oatmeal Raisin Cookies

 Recipe Type: CookiesServes: 15The CHEWIEST oatmeal raisin cookies ever! You wouldn’t even believe they’re full of wholesome ingredients!Ingredients

  • 1/2 cup soften coconut oil or butter
  • 1/2 cup brown sugar
  • 2 tablespoons maple syrup
  • 2 tablespoons peanut butter
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup oat flour
  • 1 cup steel cut oats
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 350F
  2. Cream the coconut oil and brown sugar together until fluffy
  3. Stir in the maple syrup, ground cinnamon, peanut butter, oat flour, vanilla extract and baking powder, and salt. A sticky batter should form.
  4. Fold in the raisins and steel cut oats.
  5. Scoop golf-ball sized spoonfuls of batter on to a lined baking sheet. Smooth them out so that they resemble cookie shapes.
  6. Bake cookies at 350F for 12-15 mins or until golden brown on the bottom.
