Brownie cookie bites

These fudgy brownie cookies are all the decadence but minus the mess of eating a brownie. They are bite sized to make them the perfect treat to satisfy any chocoholic. To make them all the amazing, this brownie cookie recipe is also vegan friendly for all my plant-based friends out there!

I decided to make these cookies on a whim because I wanted something chocolaty but didn’t want to make a batch of brownies because they take a while to bake and I didn’t have any bars of chocolate laying around to melt down.

Luckily, I found a bag of chocolate chips deep in the pantry and decided to make these double chocolate chip inspired cookies…or I guess they’re more like brookies because they are a blend of brownies and cookies?

Tips and tricks

The trickiest thing about these cookies were making sure that they stayed nice and chewy to resemble a brownie. The brown sugar allowed it to do that because of the molasses-like texture it gives to baked goods. I also feel that brown sugar doesn’t spread as much when you’re baking with it so the cookies stayed nice and tall to resemble a two-bite brownie!

Now if you’re really feeling fancy, you can add chopped walnuts or coconut flakes to make these cookies all the more decadent. Another option is to use white chocolate chips or toffee chips instead of dark chocolate chips to add an extra dose of sweetness.

Brownie cookie bites recipe

These fudgy brownie cookies are all the decadence but minus the mess of eating a brownie. They are bite sized to make them the perfect sweet treat to satisfy any chocoholic.
Ingredients
  • 1/2 cup butter or coconut oil softened
  • 2/3 cup brown sugar
  • 1/4 cup milk of choice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup cocoa powder
  • 1 1/4 cup flour
  • 1/2 cup dark chocolate chips
Instructions
  1. Cream the butter and brown sugar together until fluffy. Stir in the milk until a smooth paste forms.
  2. Add in the baking powder, salt, cocoa powder, and flour. Mix until a dough comes together.
  3. Fold in the dark chocolate chips. Chill the dough in the fridge for 30 minutes.
  4. Preheat the oven at 350F.
  5. Roll the chilled dough into small balls about 1″ round. Press cookies down gently so they flatten.
  6. Bake cookies at 350F for 12-15 minutes or until golden brown on the bottom
