Baked banana boats (clean eats/vegan)

Mother deer bought a HUGE bag of bananas at the farmers market the other day. She went towards the end and got them for a super good price. I didn’t mind so much though because I blended a bunch of them up to make a big ol’ batch of banana ice cream! I tend to make clean treats in bigger batches when I can because that way I know that there’s no excuse but to eat the healthier alternative since it’s already made! Anyways, it was pretty chilly today so I wasn’t up for banana ice cream and decided to make some baked banana boats instead.

Baked banana boats

Simple. Clean. Ingredients.

1 banana
fillings: diced fruit, oats, peanut butter, chocolate chips, marshmallows, graham crackers, granola, chopped nuts, etc

Slice an unpeeled banana 1/2″ deep lengthwise making sure to leave 1/2″ uncut on both sides so it still holds together. Crimp a piece of foil together to make a boat shaped vessel to hold the banana up. Place the fillings into the middle of the banana.

Bake the banana at 350F for 13 – 15 minutes until soft. Munch!

Since bananas are already sweet on their own and baking fruit only brings out their sweetness…I usually like to fill my Baked banana boats with fruit and oats instead of the sweeter things but if you’re like lil’ bun and love your sweets, feel free to go crazy with the toppings. These little fellas’ bring back so many memories for me because I used to have them at camp over the campfire. (: Well, I don’t have a campfire at home and it’s not warm enough to go camping yet so I guess an oven will have to do for now!
