These walnut cookies are made with a butter cookie base which gives them a shortbread-like texture and mouth feel.
Lunar new year is just around the corner and one of the traditional treats that are eaten around this time of year are walnut cookies because the word walnut in Chinese (hup tou) can represent family togetherness and happiness
So when you give someone walnut cookies are goods with walnuts in it, you are symbolically wishing their family a happy new year.
Besides being used to wish others a wonderful new year, walnuts can help is a great source of healthy fats and wonderful for maintaining brain health!
I always remember that walnuts are good for your brain because I think they look like little brains. Does anyone else feel this way or is it just me?
And if walnuts are good for your brain and the walnuts are in the cookies…does this mean I can have more of them? I mean it would just be the same as taking vitamin supplements right? 😉
Walnut cookies recipe
- 1/3 cup butter (or coconut oil)
- 1/3 cup sugar
- 1 egg (or 1 tablespoon flax meal + 3 tablespoons water)
- 2 cups all purpose flour
- 1 tablespoon cornstarch
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 3/4 cup chopped walnuts toasted
- Cream the butter, and sugar together in a large bowl. Whisk in the egg.
- Sift in the flour, cornstarch, baking soda, baking powder and salt. Mix until a dough forms.
- Reserve 20 pieces of chopped walnuts for topping your cookies. Stir in the remaining walnuts.
- Let the dough chill in the fridge for 30 – 45 minutes to allow for it to firm up. Preheat oven to 350F
- Form 20 equal sized dough balls and place them onto a prepared cookie sheet. Press a walnut piece in the middle of the cookie for garnish.
- Bake at 350F for 10 – 12 minutes.
- Let cool for 5 – 10 minutes before eating.
