My love of cinnamon stemmed from when I started to eat snickerdoodles at a young age. So imagine my surprise to find that you could have snickerdoodles in cake form via snickerdoodle muffins!  This snickerdoodle muffin recipe is the perfect blend of cinnamony sugary goodness that is perfect whether you have a cup of coffee with it or not!

I can’t believe it’s already the middle of FALL! Goodness I’ve been so busy that September just flew by and I’m so not ready for Autumn.

Although I must say that this year will be my first un-pumpkin filled season because I don’t think I’ve mentioned this but I’ve moved half way across the world for work!

And what’s crazier is that I don’t own an oven at my new place!Hopefully I’ll be able to survive until I get back home but my baker’s intuition is already itching especially now that I live by such a diverse array of bakeries!

If anyone has any recipes for a microwave and oven free place, I’d love to know!

Snickerdoodle muffin

This snickerdoodle cupcake recipe is the perfect blend of cinnamony sugary goodness that is perfect whether you have a cup of coffee with it or not!
Ingredients
  • 1/2 cup softened unsalted butter
  • 1 3/4 cups flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon sea salt
  • 1 teaspoon baking powder
  • 1/2 cup buttermilk
  • 3 tablespoons plain Greek yogurt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 egg
Instructions
  1. Cream the softened butter, sugar, and brown sugar together until fluffy.
  2. Stir in the buttermilk, egg, vanilla and Greek yogurt until smooth.
  3. Sift in the flour, seasalt, baking powder and cinnamon. Mix until just combined. There may still be some lumps.
  4. Bake at 350F for 15-20 mins until golden brown and a toothpick comes out clean when inserted into the middle

  2. My mother-in-law makes snickerdoodle cookies and they are so good. I love that you took that flavor and put it in a muffin. Your muffins look so good! Good luck on finding recipes for the microwave…I wish I had something to give you. I know it must be hard to be without an oven. Thank you for bringing these delicious muffins to the party!
