Healthy brownies (vegan)

These healthy brownies are made with Greek yogurt to add protein and moisture. The brownies are studded with dark chocolate chips to add another element of delicious chocolate flavour!

I always see recipes for healthy protein brownies that have been jam packed with black beans.

But I never have black beans lying around at home so making those were never really an option for me. Plus, I try to avoid food that comes from cans as much as possible and making them with dried soaked beans is a tad too tedious of a process for lil’ ol’ impatient me.

So, I ended up making healthy protein brownies with a base of Greek yogurt instead, and they turned out absolutely divine.

When they first came out of the oven, they had a light almost cake-like texture to them. They actually reminded me a little bit of the texture from the chocolate walnut fudge cake I made a while back.

But when I had them a couple hours later when they were fully cooled, the brownies firmed up and the texture of them evolved into something that was a little more chewy and fudgey.

And I thought this was the neatest thing ever! I mean it was like a two in one brownie!

Skinny healthy brownies

Ingredients (makes 8)

1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup dark chocolate chips
1/4 cup coconut oil (or oil)
1/2 cup coconut sugar
1/3 cup cocoa powder
1 teaspoon vanilla extract
1 cup plain Greek yogurt (regular plain yogurt works as well or soy yogurt)

optional: 1/2 cup dried cherries

Method

  1. Melt the coconut oil and chocolate chips using a double boiler or microwave until smooth. Stir in the cocoa powder, coconut sugar and vanilla.
  2. Sift in the flour, baking powder and salt. Mix until combined.
  3. Fold in the yogurt and dried cherries.
  4. Pour mixture into a 6″ x 8″ greased baking pan. Bake at 350F for 30 – 40 minutes until a toothpick comes out clean when inserted into the center

    1. Yes you can! Its actually better with GF flour so it doesn’t get super dense and you don’t have to worry about over-mixing the batter! Sometimes I make it with coconut or almond flour.
