Savoury oatmeal bowl

I don’t think that there’s anything more satisfying than enjoying a nice hot bowl of oats on a cold snowy day. I’ve been making savoury oatmeal bowl for lunch for a few weeks now and I figured that it was about time I share the recipe with you all because I’ve been loving it so much.

This has been my go-to lunch lately because it’s quick and easy to make.

Plus, it keeps me warm on the inside and the oats keep me full until my mid-day snack.

So what’s not to love?

I don’t always have a bowl of leftover rice in my fridge to make congee (rice porridge) so this ends up being the perfect substitute.

These oats are prepared as you would a regular bowl of oatmeal but instead of adding in fruits, nuts and seeds…you’d add in veggies, proteins and seasonings!

Savoury oatmeal bowl recipe

Ingredients

1/2 cup rolled oats
2 cups water (or broth of choice)
2 cups of assorted diced veggies (squash, carrot, celery, zucchini, mushrooms, tomato, corn, etc.)
3/4 cup of protein (flaked tuna, diced tofu, shelled edamame, diced cooked meat)
seasonings to taste: salt, pepper, chili flakes, etc.

Method

  1. Bring the water/broth to a boil in a sauce pan.
  2. Add in the oats and reduce it to medium-low heat. Let the oats simmer for 13-15 minutes until almost all the water/broth has been absorbed.
  3. Add in the vegetables, proteins, and seasonings. Let everything simmer for another 3-5 minutes until vegetables are cooked through.

    Since I’ve always been a huge fan of oatmeal for it’s convenience, versatility, and cheapness, I’ve always wondered about trying to create savory bowls of oats. This gives me a pretty good base for ideas! Thanks!
