Oatmeal raisin cookie cereal bites

Love your milk and cookies? Well, here’s a way you can have both at the same time without having to constantly dunk your cookies or worry about crumbs getting in your milk! Yup, that’s right, we’re going to make cookie dough cereal bites! These cookie cereal bites are bite sized, super cute and fun to eat so what’s not to love? If oatmeal raisin isn’t your thing, you can always make it with a cookie batter of your choice! I make and post recipes to inspire creativity not dictate what you decide to make so be creative and have fun!

Oatmeal raisin cookie cereal bites

Ingredients

  • 1 1/4 cups white whole wheat flour
  • 3/4 cup oats
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup coconut oil (or margarine/butter)
  • 2 tablespoons sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 tablespoon ground flax + 1 tablespoon water (or 1 egg)
  • 1/2 cup raisins  

chocolate chip cookie version: leave out the cinnamon and add 1/2 cup mini chocolate chips instead

Let’s get rollin:

1. Cream the coconut oil, sugar, brown sugar and vanilla together in a large bowl. When the mixture is creamy, stir in the egg.

2. Add the whole wheat flour, oatmeal, baking soda, cinnamon and salt to the creamed mixture. Stir in the raisins.

3. Shape the dough into a rectangle and seal it with plastic wrap. Let the dough firm up in the fridge for 15 minutes.

4. Cut the dough into 1.5cm squares.

5. Roll each mini square into little cookie dough bites.

6. Bake at 350F for 5 – 8 minutes.

7. Enjoy in a bowl of milk…

or as cookie bites!

Lil bun couldn’t get enough of these because that girl loves her milk and cookies and brother deer who has cereal every morning for breakfast…ended up eating the rest of the batch when lil’ bun wasn’t watching. So…I guess I’m going to have to make another batch of these some time soon because they were such a hit! But I think I’m going to make a different cookie dough flavor next time…perhaps chocolate chips because we just recently bought a new bag of mini chipits! yay! Hope you love these as much as they did!

  1. Can I just shape these into regular sized cookies and press them down a little so they look like cookies? And do they taste like regular oatmeal raisin cookies, or do they taste differently because they are little cereal munch balls.

    btw I love how you used coconut oi!!!

    1. Yes you can definitely squish them down to make them miniature cookies and they taste just like regular cookies but just miniature sized! If you want to make them crunchy you can always bake them a little longer but I like mine soft and gooey 🙂 Hope you like them!
