Maple biscuits (vegan friendly)

I was sitting in my Archaeology class the other day and we were learning all about the foods that were first domesticated in Canada. One of which was…MAPLE! I mean, there’s a reason as to why there’s a maple leaf on our national flag you know! Being the foodie blogger that I am, I lingered on the thought of maple syrup for the remainder of the class and when I got home, I knew I had to make a batch of these maple biscuits!

Not only had it been a while since I made biscuits but how could I resist…

The flakiness of the pastry,

the sweetness of the maple syrup,

and the nostalgia that came along with such a treat?

One of the reason as to why I rarely ever make biscuits is that I lack the tools necessary to make them. But over the years, I’ve learned that you can find things in your house to use as substitutes.

Instead of using a pastry blender for cutting in the butter, I like to use a fork instead because the prongs resemble the lines on a pastry cutter. Sometimes I even like to just get in there and use my hands but if you have warm hands, I wouldn’t suggest doing this because you will end up melting the chunks of butter in it which also means that you will loose the flakiness in your pastry.

Another tool that I lack is a round cookie cutter. So, typically I will try to find a round thin rimmed glass to cut out my biscuits instead and sometimes if all the glasses happen to be in use, I’ll use the rim of a mason jar instead.

How to make biscuits

I know I seem to have mentioned quite a bit already but before I let you go to the recipe, here’s a foodie tid-bit for you.

Do you know how to differentiate between scones and biscuits? Yes, there is a difference! And it’s all in the SHAPE of them! Scones are cut into triangles while biscuits are cut into circles.

Ingredients (makes 6):

  • 1 cup + 3 tablespoons flour
  • 1/3 cup oats
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil or butter (cut into cubes)
  • 3 tablespoons milk of choice
  • 3 tablespoons maple syrup
  • 1 egg (or 3 more tablespoons of milk)

Method:

  1. Combine the flour, oats, baking powder, sugar, and salt in a large bowl.
  2. Add in your coconut oil/butter. Cut your coconut oil/butter into your flour mixture by using a pastry blender, a fork, or slicing the cubes with 2 butter knives until it resembles coarse crumbs.
  3. Stir in the milk, maple syrup and egg (if using) until just combined.
  4. Turn your dough out onto a lightly floured surface and roll it the dough out until it is 3/4″ thick. You should still see chunks of cubed coconut oil/butter in your dough.
  5. Cut the dough into circles by using a circle cutter or the rim of a glass.
  6. Bake at 400F for 15 – 20 minutes, until golden brown.
  7. Let your biscuits cool for 5 minutes before topping them with more maple syrup!

    Scones and biscuits are completely different things in other parts of the world. Here a biscuit is what you probably call a cookie!

    1. I know! Food terminology is such a curious thing!
