Lady finger biscuits

I thought that I’d go back to the basic classics for this week’s Fiesta Friday by making a lovely batch of Lady finger biscuits! If you don’t know what these are, you’ve been missing out cupcake! Lady finger biscuits are essential for making tiramisu. Although I’m no tiramisu fan, I’m a big fan of lady finger biscuits because they’re so pillow-y soft to eat!

Lil’ bun is just the same but I feel like she likes madelines more in terms of cake like cookies because they’re shell shaped but either way cake-y cookies are oh so yum! Originally I wanted to make madelines but since we didn’t have the shell moulds for them, I decided to make lady fingers instead. I find that people tend to buy lady finger biscuits from the store when they make tiramisu but why not make it at home preservative free? I mean they’re super duper easy to make and need minimal ingredients. Plus, I think making them at home would be a cheaper option too!

Lady finger biscuits

Ingredients

2 eggs
1/3 cup sugar
1/2 cup flour
1/4 teaspoon baking powder

Bake:

1. Separate the egg whites from the yolks.

2. In a large bowl, whip the egg whites with an electric mixer until it reaches stiff peaks.

Baking ingredients

3. In a separate bowl, combine the eggs, sugar and baking powder.

4. Fold the egg yolk mixture into the egg whites until combined. Then sift and fold in the flour.

5. Transfer the batter into a piping bag with a round tip.

6. Pipe the cookies in straight lines onto a baking sheet.

How to make Lady finger biscuits

7. Bake at 400F for 15 – 20 minutes until golden on the bottom.

    Am I the only one that things “lady fingers” is a strange and creepy name for a pastry? LOL

      no I think it’s creepy too…but I feel like it’s a direct translation type of thing…maybe…
