Honey roasted almonds

Snack-ity snack snack time! Lil’ bun and I decided to try to add a bit of flare to our boring old almonds…and we ended up coming across this recipe! Normally we make our roasted almonds with savory spices, but this time, we decided to go sweet. That’s why we decided to make these Honey roasted almonds!

Even though lil’ bun is usually not a big fan of almonds, she loved these and I completely agree with her on this one. At first you taste the sweet cinnamon-y sweet crunch then later you get the subtle smokey taste from roasting in the oven. It was a perfect combination! This is definitely going in the favorites section of the recipe book.

Ingredients

  • 2 cups almonds
  • 1/4 cup sugar
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 teaspoons oil (something flavorless like canola or grapeseed)
  • 2 tablespoons water

Method

1. Spread almonds out on a baking sheet  and place them in the oven for 12-15 minutes at 350F. Stir them every 5 minutes so that they get toasted evenly. Bake them until they are toasted on the outside, then remove them from the oven.

2. While the almonds are toasting, combine the sugar, cinnamon and nutmeg in a bowl, set this aside.

3. Combine the honey, water and oil in a small sauce pan and bring it to a simmer. Make sure you stir it often or it’ll end up burning!

4. Add the almonds into your simmering honey mixture and stir this until all the toasted almonds have absorbed the honey mixture. Again, you’ll need to stir every now and then to keep it from burning.

5. When the mixture is absorbed, QUICKLY transfer the almonds into a bowl and add the cinnamon/nutmeg sugar mixture to it. Mix the almonds in the sugar until they are coated.

6. Pour them onto a sheet of wax paper, and let them cool. Lil’ bun and I ended up just putting ours in the fridge to cut down cooling time because we couldn’t wait to try them!
