These healthy sushi rolls are customizable, portable and perfect for a lunch or dinner. They are loaded with fibre, protein and veggies to make them super filling. Feel free to switch up the add-ins to personalize them and make them your own!

Plus they’re perfect for one of those days where you want to empty everything out in the fridge because you can literally put anything you want in them!
Sushi roll fillings
Our favorite things to put inside are avocados, imitation crab, egg, cucumbers and sweet potato. This particular day we were feeling adventurous so we also added in mango and cooked salmon. I’m not sure that it went over all that well because we thought that they tasted odd with those additions but trying new things is always fun right?
You can use any type of rice you want but I decided to use purple rice because it’s my favorite. It’s a little odd to have them purple and your fingers might end up having some purple residue but it’s soooo good with it. You HAVE to go try it made this way!
Healthy sushi roll recipe
- 2 cups of rice (I used purple rice but brown and white work as well)
- A bunch of veggies of choice sliced thin vertically
- Protein of choice also cut into vertical strips
- 1 package large square sheet of seaweed
- 2 tablespoons sushi vinegar (also called rice vinegar)
- Mayo if desired
- Cook the rice. While the rice is cooking, prepare the vegetables and proteins by cutting them into strips.
- Allow the rice to cool by transferring it into a shallow bowl and stirring it around. When it’s no longer steaming, add in the sushi vinegar and mix
- Lay down a piece of seaweed onto a bamboo sushi mat. Spread 3/4 – 1 cup of rice on top. The rice layer should be about 1 cm thick. Lay on the filling horizontally and roll it tightly as you would a burrito or taco.
- Slice into rounds. Eat.

I NEED to try making these beautiful sushi rolls! Honestly, I am really bad at rolling and slicing sushi rolls, so I need to practice. Black or purple rice is my favorite kind of rice to have in sushi too!
