Carrot squares (clean eats/vegan)

Easter is coming up so I decided get into the season and make some carrot squares. These carrot squares are a little like granola bars but more cake-like in texture  because of the moisture from the carrots. I know I normally do clean eats with a side of nutritional facts but it’s exam season so life gets busy these days. Plus, I’ve already done a blurb on oats in my clean eats: banana oatmeal cookies post and a carrots chat in my clean eats: carrot cake post so I wasn’t sure what to talk about here.

Carrot squares

Ingredients (makes 12):

2 cup oats
1/2 cup water (you can use apple juice instead for a sweeter bake)
1 carrot grated (about 1 cup)
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 cup raisins or dried cranberries
2 tablespoons honey/agave for more sweetness (optional)

Method

  1. Combine the oats, carrot, cinnamon, ginger, and raisins/cranberries in a bowl. Add in the water and stir until it becomes a batter.

2. Press everything into a lined baking pan.

3. Bake at 375F for 20 – 25 minutes until golden brown and it holds together on it’s own.

Okay, I know I said there wouldn’t be nutritional talk but…I changed my mind…a little bit. These delightful treats are only 70 calories a square (without the use of apple juice or honey/agave) and packed full of healthy goodness.

These squares will keep you nice and full for a long time because of the oat fiber and the carrots will give you a healthy dose of vitamin A and beta-carotene. And I highly doubt those “low-cal” snack packs out there can give you the same health benefits!
