Clean eats: bibimbap

Bibimbap is a traditional Korean rice dish that’s typically served warm. If you don’t already know what it is, it’s basically a bowl of warm rice topped with sauteed veggies, pepper paste and an egg. Then everything is stirred together just before eating. I love bibimbap but I don’t order it often because I don’t really eat white rice or beef.

So with all my favorite foods, I decided to make a healthier version of the dish by using quinoa instead of rice. I also topped the quinoa with lots of veggies and then a bit of flaked tuna instead of beef. I kept my veggies raw because I was too lazy to sautee each and every one separately especially since I was only making one portion of it so it didn’t seem all too practical to do so. Of course if you want a more traditional version of it you can always sautee them all.

Simple. Clean. Ingredients. (makes 2)

2 cups of prepared quinoa
2 eggs
1 tomato diced
1 stalk celery diced
1/2 bell pepper diced
1/4 cucumber diced
1/2 cup flaked albacore tuna

hot sauce to taste (optional)

Method

1. Cook your egg sunny side up

2. Place half the quinoa into a bowl. Place your veggies and tuna along the side of the bowl. Top with the sunny side egg. Munch!
