Hello friends! We celebrated Old Bean’s birthday recently and because we enjoyed it so much the first time we got it, we decided to get the passion fruit cake from Thierry again.
Passion fruit cake
The passion fruit cake from Thierry is filled with a smooth and tart passion fruit mousse, white genoise cake, and the topped with a passion fruit gelee.
The first thing I noticed when I was comparing the cake was that they added more fruit to the top of the cake. The photo above is from this year and the photo below was taken a couple of years ago. As you can see, they put far more fruit on it this time around.
The itself is gorgeous to look at either way but it looked more luxurious with the extra pieces of fruit on top. The mousse was silky smooth and slightly tart so by no means was this a sweet cake. My favourite part to look at when it comes to cakes is how even the layers are on the inside. This one had equal layers of genoise sponge and mousse.
Even though the cake was nice and soft for the most part, every so often you would get a passion fruit seed. That added crunch to your bite of cake. I can see how some people might not like that but I like the contrast of textures.
I’ve had one of Thierry’s chocolate cakes before and I found it to be too rich for my liking. So for those who are a fan of Thierry’s pastries but don’t like things too sweet, give this one a try, you won’t regret it!
