I LOVE all things sweet potato. Especially when it’s Japanese sweet potato. It’s sweet, savory, filling, nourishing and comforting. It’s perfect. That’s why I decided to add it to my oats to make Sweet potato oatmeal!
Since I adore sweet potatoes so much, I try to incorporate in pretty much everything that I eat and for the past little while I’ve been absolutely obsessed with putting it into my oatmeal.
It reminds me of eating rice porridge (congee) but way more time friendly because you don’t need to worry about cooking rice.
As you can see, when I like something, I literally try to put it in every single thing I possibly can because I just can’t get over it.
So be on the look out for my sweet potato cake recipe that’s coming up because when you put a vegetable (technically a tuber) in a cake that means it’s healthy right? 😉

Sweet potato oatmeal recipe
- 1 medium sweet potato (peeled and cubed)
- 1 cup milk of choice
- 3/4 cup steel cut oats
- seasonings if desired
- Pour your milk into a medium pot. Bring your milk to a simmer on medium heat.
- Add in your sweet potatoes and oats. Reduce heat to simmer. Let the oats cook for 3-5 minutes or until it reaches your desired consistency.
- Top with your favorite nuts, seeds, and fruit
