If you came to me a month ago and asked me about protein, I would probably reply with “what? protein supplements? why is that even necessary?” but I’ve been getting more and more into fitness lately and after doing lots of research, I realized that if I wanted to tone up and retain what I gain, I needed to get more protein in me. The only problem was…how? That’s where this Protein mug cake comes in!
I’ve heard a lot of buzz in the fitness community about using protein powders to make Protein pancakes and Protein mug cake so I decided to jump on the bandwagon and experiment with it myself! And this is the version I finally settled on after a lot of tweaking on my part.
Ingredients:
1 egg (or 3 egg whites)
1 tablespoon ground flax seeds
1/4 cup protein powder
2 tablespoons Greek yogurt
1/4 teaspoon baking powder
1 tablespoon cocoa powder (optional if not using flavored protein)
1/4 cup peanut butter (optional for flavor and more protein)
Pancakes: combine all the ingredients and cook on a frying pan as you would normal pancakes
Mug cake: mix all the ingredients until just combined then microwave for 60 seconds if the top doesn’t feel dry, put it in for another 30 seconds.
