Healthy oatmeal jam bars that are perfect to have as a sweet breakfast or with a dollop of ice cream for dessert. I love bars! No, not the kind that serves drinks, the chewy portable kind.

One of lil’ bun’s favorite store bought pastries has got to be the blueberry bars from Starbucks. She likes them because they’re like a fusion of two of her favorite treats, blueberry muffins and oatmeal raisin cookies!

I don’t blame her though, because I love my oatmeal bakes and these oatmeal bars are just that but better because there’s a generous layer of fruity jammy goodness in the middle.

Of course you could fill these oatmeal bars with any sort of jam you want in the middle but we decided to go with blueberry because not only is it berry season but we just went blueberry picking and made a bunch of homemade jam. 🙂

So what better way to make use of it than “jam-packing” it into some of our delicious bars?

Oatmeal jam bars (vegan friendly)
 
Recipe Type: Dessert, Breakfast
Serves: 8″ x 6″ baking pan
Healthy oatmeal jam bars that are perfect to have as a sweet breakfast or with a dollop of ice cream for dessert.
Ingredients
  • 1/3 cup brown sugar
  • 1 cup rolled oats
  • 3/4 cup whole wheat flour (can sub all purpose)
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/3 cup margarine (can sub butter)
  • 1 cup blueberry jam (or jam of choice)
Instructions
  1. Combine the rolled oats flour, brown sugar, salt, baking powder, and baking soda in a large bowl.
  2. Cut the coconut oil into the flour mixture with a fork or pastry cutter. The mixture should resemble coarse crumbs.
  3. Line or grease a 8″ x 6″ baking pan. Pour in half your crumb mixture and press it down into the pan. Bake at 350F for 8 – 10 minutes until golden. This will help the crust firm up more than the topping layer.
  4. Spread your jam of choice evenly on top of the crust. Top with remaining 1/2 of the crumb mixture.
  5. Return the baking pan to the oven and bake for another 15 – 20 minutes until golden brown.
  6. Let cool and cut into squares or bars. Store extra in an airtight container at room temperature for up to a week or wrap each square individually to freeze.

    I feel a little silly but I have never thought about making my own! Like your friend I prefer the chewy ones with lots of fruit in the flavour and jam and oatmeal sounds just perfect! 🙂
