Elmo Baking Co. is unique

What makes Elmo Baking Co. unique is their large assortment of croissant flavours. They stay away from the typical and always try to work outside the box by combining and using flavours you wouldn’t typically expect in a croissant like black sesame or peanut butter and jelly!

What’s interesting about Elmo Baking Co is that they serve their croissants cut in half because that’s how they put the filling inside of it like a croissant sandwich! I’ve had other filled croissants where the filling is piped in or layered before it being baked so this was something new for me.

Black Sesame

Scratch made black sesame paste lightly sweetened

I love black sesame because it’s so nutty and the flavor is so distinct that I was excited to try this croissant out. I also loved how there was black charcoal striped pastry on the outside to let you know what flavour the croissant was. Even though it looked like there was lots of filling on the inside, I thought it could have been spread thicker because the black sesame flavour wasn’t very strong. I would have liked to tasted it more but the amount of pastry there was on the outside didn’t allow it to be highlighted as much as it could have been.

Levelled Up! Pan au Chocolat

A chocolate croissant on a whole new level just like the name suggests! There was chocolate pastry on the outside and chocolate chunks on the inside. It could have been a bit more chocolately for something “levelled up” but I enjoyed it just the same.

“O Canada”

Almond filling with organic maple syrup, Canadian whiskey, Saskatoon Berry compote

A homage to Canadian culture. I loved how the almond filling was light because I usually find marzipan to be too heavy for my liking. Even though it had Canadian whiskey in it, you wouldn’t know unless you were told beforehand because it wasn’t a prominent flavour. I wish you could have tasted the Saskatoon berry more because I was most curious about how that would taste like.

I don’t remember the name of this one but it had a white drizzle on top and tasted like coffee! I’m guessing tiramisu maybe? If you’re a coffee lover you’ll find yourself enjoying this one because it had such a strong espresso flavor! I recommend having this one dipped in milk or coffee to take everything to a whole other level!

Ube Halaya

sweetened ube (purple yam) puree

This was my favorite out of all the croissants. Not only did I LOVE the purple striped exterior but I also loved how earthy and mellow the flavour was in this. The ube filling was lightly sweetened because similar to the black sesame one in that it is house made. I really liked how it added subtle flavor to the pastry instead of overwhelming everything.

Hazelnut-cocoa and flambeed bananas

This was the sweetest croissant of the bunch. It had both chocolate hazelnut filling inside and bananas! If you’re a fan of all things chocolate and banana this is for you! It had a lot of flavour to it but they were all a bit muddled together because the bananas were so soft. I wasn’t a huge fan of this one in particular but I can see why it is a favorite.

“PB & J”

This croissant wasn’t our favorite of the bunch merely because we aren’t PBJ people. I’m not a huge fan of peanut butter but the jam was so sweet and fresh! You could tell that it wasn’t something that came out of the jar. Although I really enjoyed how the crushed nuts on top added a nice crunch, after a while it got to be too much because the croissant was also a crispy.
