Decadent chocolate brownies

Usually I bang out recipes like no tomorrow on my blog but it’s been a little slower lately because 1) I want to spend more time perfecting my recipes, and 2) it’s paper season at school and instead of being able to spend my time writing ever so passionately about food, I have to channel all that energy into writing 20 page essays instead.

With that being said, I only have about a month left and then it’s time for the holidays! 🙂

But enough about school, because I much rather talk about the delightful treats I baked up the other day. Ever since I made chocolate chip cookies last week, I’ve been on a back to basic streak and have been wanting to make more classic recipes.

And you can’t get anymore classic than brownies!

The thing about basics is that once you get the base dough/batter down, you can add whatever you want to it to cater it to your own taste buds. I let lil’ bun customize this batch and she decided to go with a rocky road inspired creation by adding in marshmallows, chocolate chips and chopped walnuts!

These were the most moist, fudgy and decadent chocolate brownies that has ever come out of my kitchen let alone, tasted in my life.

What classic recipe should I post next?

Decadent chocolate brownies recipe

Ingredients (makes 12)

2/3 cup coconut oil (feel free to use margarine or butter instead)
1/4 cup brown sugar
1/4 cup sugar
1 egg
1 teaspoon vanilla extract
2/3 cup milk
1 teaspoon baking powder
1/3 cup unsweetened cocoa powder
3/4 cup flour
1/4 teaspoon salt

add-ins:
1/3 cup coarsely chopped walnuts
1/3 cup semisweet chocolate chips

Method

  1. Mix the coconut oil, brown sugar and sugar in a large bowl. Stir in the milk, egg and vanilla until well combined.
  2. Sift in the cocoa powder, flour, baking powder and salt.
  3. Place all your add-ins in a separate bowl and toss them together until they are mixed up. Take half of your add-ins out and fold it into the batter.
  4. Transfer your brownie batter into an 6″ x 10″ baking pan. Top with remaining add-ins.
  5. Bake at 350F for 30-45 minutes until a toothpick comes out clean when inserted in centre.
  6. Let your brownies cook for 15 minutes before cutting into 12 pieces and munching.
