Hello friends! Whew, I can’t believe that the holiday season is already coming to an end. Butter.mere is a patisserie located in Vancouver that blends traditional French pastry techniques with Asian flavors. Butter.mere specializes in a variety of pastries, cakes, chocolates and viennoiserie. They also recently started pastry workshops for pastry lovers alike.

Pillow cakes

We never tried anything from Butter.mere until Brother deer brought home a box of their pillow cakes. Pillows cakes are priced at $6 each and come in 11 different flavors. However, for Christmas, they offered a set of 5 specialty flavors and set the limit at 100 sets so quantities were limited. Pillow cakes are little mounds of flavorful mousse cakes beautifully decorated to make them look like works of art. They’re actually so high in demand sometimes that they get taken off the menu temporarily.

Beginning from the left and ending on the right, here are our thoughts.

Snowflake (peppermint dark chocolate)

Looking at this one, you wouldn’t think that it would be peppermint flavored at all so it was quite the surprise. The cake bursted with peppermint flavor but it wasn’t overboard to the point of tasting like toothpaste. It reminded us of a peppermint patty.

Santa (guava, banana, coconut)

This one was super fruity and reminded us of the tropics. Again, the santa suit exterior really threw us off on what the flavor of it would be. This was my personal favorite because of how light and aromatic it was. At first I thought it was lychee but turns out it was actually just the guava.

Wreath (peanut, honey, green apple)

I wasn’t a huge fan of this one because it was very sticky on the inside and difficult to eat. It reminded me of a peanut candy bar like Oh’ Henry where there is a layer of peanut under a chewy topping. The green apple was lost amongst all the stickiness of the honey and peanuts.

Reindeer (pecan, yuzu, caramel)

This one was the most unique of the bunch. The yuzu was the most pre-dominant flavor out of the three and added a pop of freshness. Even though there was caramel, it wasn’t the tacky kind that got stuck in your teeth.

Christmas tree (coconut lemongrass)

This one was yet another unique flavor combination that we looked forward to trying. The coconut milk was creamy like coconut milk but unfortuantely the lemongrass got hidden away behind it all. Still good but not the best.
