Healthy mug cakes! (gluten-free/clean eats)

You can eat clean and have your cake too with these healthy mug cake recipes! Yup, clean eats is keeping up with the mug cake trend and showing you that mug cakes aren’t always unhealthy and that cake doesn’t always need a long prep/bake time. The thing I like about mug cakes is that it’s an individual portion. Sometimes I find myself wandering into the kitchen and having bits and pieces of the treats I made every time I go in and then somehow before I know it, I end up eating 5 cookies instead of 1. So being able to make individual portions of sweet treats really help since now you don’t have an entire cake or batch of cookies lying around in your kitchen to “unconsciously” munch on. Anyway, here are recipes for a fruity cake, a chocolatey cake and a healthy cake so you can satisfy any of your cake cravings!



 Simple. Clean. Ingredients

1 1/2 tablespoon coconut flour
1 tablespoon shredded coconut
1 tablespoon coconut/cane sugar
1/4 teaspoon baking powder
1 egg
1/3 cup milk of choice
1 teaspoon vanilla
1 – 2 sliced strawberries
strawberry preserves (optional)

Combine all the ingredients in a mug and microwave for 1.5 – 2 minutes. Remove the cake from the mug, slice in half and fill with sliced strawberries and preserves. Munch!




Simple. Clean. Ingredients

1 egg
2 tablespoons cocoa powder
2 tablespoon honey
1/4 teaspoon baking soda

Combine all the ingredients in a mug and microwave for 1 – 1.5 minutes until a toothpick comes out clean. Munch!

1/3 cup wheat bran
2 teaspoons ground flax seeds
1/4 teaspoon baking powder
1/2 teaspoon ground cinnamon
1 egg
2 1/2 tablespoons milk of choice
1/4 teaspoon vanilla extract
2 tablespoons dried fruit for sweetness

Put all the ingredients in a mug and stir until combined. Microwave the mixture for 1.5 – 2 minutes until the top feels dry.
