Chocolate chip bar cookies (vegan)

Today was another baking day, which means, house will smell like cookies all day, day. Lil’ bun and I didn’t have much time today since I had a stack of books to read for school…so we just made some quick chocolate chip bar cookies.
Get this:
1 3/4 cups flour
3/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cups sugar
1/2 cup vegetable oil
1 teaspoons vanilla extract
1/2 cup soy milk
1/2 cup mini chocolate chips (or vegan alternative)
Now do this:
1. Preheat oven to 350°F
2. Combine stir together the flour, baking powder, baking soda, salt and sugar.


3. Add the oil, vanilla, milk and chocolate chips.


4. Mix all the ingredients together


5. Pour mixture into a parchment lined 6 x 11 inch pan and bake for 25-30 minutes until golden brown


6. Cut up into shapes and enjoy!


I would of taken a photo of it out of the pan but since I admit-ably forgot to grease or line the pan, the cookie didn’t stay together very well when we tried to take it out. The cookie was nice, but I thought it was a little lacking in the vanilla flavoring department, so you might want to add a tad more than what the recipe calls for. The cookie texture was a little odd to me though it was sort of fluffy but flaky at the same time, similarly to a scone. None of that really matters though since a cookie is a cookie and it’s going to be devoured either way because they are all scrumptious.
