Apple black tea loaf (vegan friendly)

I absolutely adore apples but what I love even more is tea! Although I’m not a fan of black tea in particular, I like to use it in baking because the flavor of it comes through the best. I’m stuck spending the day inside studying again so I figured I would bake myself a treat to make my time a little bit better. I wanted to make a loaf but since I’m not a fan of the heaviness of pound cakes, I decided to make a light loaf using really little fat instead. If the fact that this loaf has apples, tea and is (almost) healthy doesn’t convince you to make this loaf for yourself, I don’t know what will. I mean, the flavour of black tea and the texture of apples makes this loaf is totally worth that study break you’re probably in need of too!

Ingredients (1 smaller loaf):

1 cup flour
2 teaspoon baking powder
2 eggs (or 2 tablespoon ground flax + 1/3 cup water)
1/4 cup vegetable oil
1/4 cup soy milk
2 black tea bags
1 apple (cut into thin slices)

Let’s go!

1. Put the sugar in a large bowl and whisk in the egg or flax mixture. Then, stir in the milk and oil.


2. Sift in the flour and the baking powder. Then mix everything together until a smooth batter forms.


3. Add in the black tea leaves and 2/3 of the apples.


4. Pour the batter into a loaf pan and top with the remaining apple slices.


5. Bake at 350F for 40 – 50 minutes until golden.
