Happy Holidays everyone and I hope you’re having a fabulous time with your families! I don’t know about you but I don’t think I could ever be able to go through the holiday season without having at least a couple gingerbread cookies.
Gingerbread cookies are a nostalgic cookie for me.
Growing up, every Christmas, I would make a gingerbread house with my family.
Usually it would end up a disaster and the “house” would look like it just went through a snow storm by the end of it. The family bonding that comes along with the assembling process left us with memories.
Unfortunately, we’ve slowly forgotten about such a tradition because we all grew up, got busier and formed our own traditions with our friends. It’s a little bittersweet to have such a fun filled tradition disappear but forming new ones are just as wonderful.
School has really been busy for me this past few months because my program is quite intensive. If you aren’t aware, I’m currently doing a one year program to become an elementary school teacher.
I guess the program has brought the child in me back to life because I’ve actually been thinking about making gingerbread people cookies since October!
And I’m so glad that I was finally able to make them because they were so delicious and brought back so many good memories for me 🙂

These cookies look utterly divine - I cannot believe your gingerbread houses ever collapsed, not with these professional-looking fellows!
Thank you so much for sharing these with us at our very special Fiesta Friday celebration. Have a lovely Christmas!

Well, the child in me used to love to overload my gingerbread house roof with candy so perhaps that MAY have contributed to it's failure ;)
This looks incredible--the gingerbread men look so cute! I have to try making this, even if by the time I can Christmas is over!
Gingerbread cookies are fine all year round in my book (;
These cookies are so cute :D Merry Christmas!
Gingerbread cookies always appear a time or two on my Holiday Cookie Table. I think I have the same cutter - perfect when you don't want to decorate them. Gingerbread houses were a big family tradition in my home for almost 20 years - I miss the tradition! Thanks for bringing your cookies to the big 100 at Fiesta Friday. Happy Holidays...
Adorable cookie cutters make everything all the more festive and fun! I almost miss the devastating moments when my gingerbread houses collapsed due to candy overload on the roof :)
The cookies are adorable and they are vegan too, look beautiful and delicious Thank you so much for bringing them to the party,
Thank you Suzanne, hopefully not too adorable to eat ;)

What darling little gingerbread men! I never thought they could be vegan, too. Give me the butter, tho, hah! Thanks so much for sharing this on Fiesta Friday and Happy New Year!!
Your gingerbreads are so cute! I have never had vegan gingerbreads before but this sounds absolutely delish :)
