These gluten free black sesame cookies are soft, chewy and nutty all at the same time. They’re perfect with a cup of tea but I like it best with a glass of coconut milk.

It feels so strange to finally been blogging after having a 2 week absence but life’s been busy lately and I’m just starting to get used to my new schedule. I feel like I said that the last time I blogged but the teaching life is constantly changing and no day is the same!
I’ve recently become gluten-free due to sensitivities and I’ve been really trying to explore gluten free options. I recently began experimenting with rice flour and ended up creating these chewy black sesame cookies.

Rice flour sounds like an interesting substitute! I can't wait to try these out and see what the texture is like
I like that these are not too sweet. They probably wouldn't produce the same sugar rush that regular cookies do. Happy experimenting. I hope you are feeling better without gluten in your life.

I love the originality of this gluten-free recipe with the ground black sesame seeds. I do have some in my pantry, and might just give these a try. I made some very good gluten free ginger snaps with chickpea flour - even better than the 'regular'.
Wow I've never heard of using chickpea flour before but those sound like some protein packed ginger snaps!
