These M&M blondie cookie bars are filled with chocolatey M&Ms. They are like having brownies but with a vanilla flavor profile as a base instead.

Instead of making them like cookies where you would drop the dough by the spoonful, all you need to do is spread the batter onto a baking pan and you’re good to go!

The thing about this recipe is that you need to follow every single step to the T otherwise they won’t turn out the way they’re intended to.

Trust me, I’ve tried.

On the note of not following the recipe properly, “back in the day” when I took Food Studies in high school, I would barely ever read my recipe the whole way through before carrying it out.

That’s what happens when you’re a real go-getter and have a passion for food so you can’t blame me for doing so.

Most of the time I would get into trouble for it because “it’s essential to read all the instructions first otherwise it won’t turn out properly.”

And after a while, my teacher finally got to me and I started following the recipe again since things weren’t tasting too stellar so I figured I should make the change.

For the most part sticking to the recipe made all the difference but there was this one instance where we were making bar cookies and even after 35 mins in the oven, ours wouldn’t set.

So what did I do? I shook them and banged my baking pan on the table. My teacher came over asking what I was doing and I told her “I’m checking to make sure it’s ready.” She then told me to put them back in the oven and let them be.

I’m not sure if I learned anything from that instance though because to be honest, shaking our baking pan actually made our bars turn out chewier and fudgier than our friend’s batch….which made them all the more delicious.

M&M cookie bars recipe

M&M blondie cookie pie
Recipe Type: Cookie
Serves: one 8″ pie plate or an 8″ x 8″ pan
Ingredients
  • 1/2 cup unsalted butter (melted)
  • 1 teaspoon vanilla
  • 1 egg
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup M&Ms
Instructions
  1. Preheat oven to 350F.
  2. Combine the butter, egg, brown sugar, sugar and vanilla in a medium bowl. Mix until incorporated.
  3. Sift in the flour, salt, baking soda and baking powder until just combined. The batter will be thick. Fold in the M&Ms.
  4. Transfer the batter onto a prepared baking pan or pie plate
  5. Bake for 20 – 25 minutes until golden brown and a toothpick comes out clean when inserted in the center.
  6. Let cool on the counter for 10 minutes to set before removing and slicing.
