Soft baked Funfetti cookies

Hello friends! How has your week been coming along? This week is Lil’ bun’s birthday! To go along with her week of birthday celebration, we decided to make funfetti cookies because you can’t go wrong with them when it comes to birthdays.

Now typically we enjoy our chewy cookies but lil’ bun wanted soft ones this time around so we decided to make the dough a little differently than we normally would.

And then to top the dough off right, we decided to use rainbow chocolate pearls and dark chocolate chunks to make it all the more wonderful and delicious to eat.

What are your favorite birthday treats or meals? Mine has got to be a moist and fragrant chocolate banana cake. Oh how I dream of having a slice of that right now!

Funfetti cookies recipe

Soft baked Funfetti cookies
Serves: 12
Ingredients
  • 1 1/2 teaspoon baking powder
  • 3 cup all purpose flour
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 cup softened butter
  • 1/3 cup sour cream
  • 1 egg
  • 1 teaspoons vanilla
  • 3 tablespoons rainbow chocolate chips
  • 1/4 cup chocolate bark chopped
Instructions
  1. Cream the butter and sugar together until fluffy. Stir in the vanilla, sour cream and egg. Mix until smooth.
  2. Sift in the flour, baking powder and salt. Mix until a dough forms. Add in the rainbow chocolate chips and chocolate chunks.
  3. Scoop the cookie dough out into 12 golf-ball sized portions. Roll the dough into a ball and flatten them slightly. Place the cookies onto a lined baking tray.
  4. Bake at 350F fir 10-12 minutes until golden brown. They should still be soft in the middle but golden brown on the bottoms.
  5. Let cool before eating. Store the cookies for up to a week in an airtight container
