Apple spice cake (vegan friendly)

Apple season! Sigh…oh fall, why are there so many wonderful things in season this time of the year? Lil’ bun and I decided to take advantage of the apples we picked at the farm last weekend and make some yummlicious apple cake. Originally we were planning on making pie, but we only had jonagold apples which aren’t the optimal type of apples for pies…pies prefer…granny smiths. Well, enough chit chat, here’s what we did to create our cake! (:

Scavenge your pantry (1cake):
adapted from

1 cups whole wheat flour (or regular all purpose)
1/3 cup oats
1/2 cup sugar
2/3 teaspoon baking soda
2/3 teaspoon cinnamon
2/3 teaspoon nutmeg
1/3 teaspoon salt
1 cup greek yogurt (or 1 1/4 cup oil if you want to make it vegan)
2/3 tablespoon cornstarch
1/4 cup milk of your liking
2 teaspoons vanilla extract
1 medium apple (peeled and diced up)
1/3 cup dried cranberries (optional)
1. Preheat oven to 350 degrees.
2. Combine all dry ingredients in a large bowl; whole wheat flour, sugar, baking soda, cinnamon, nutmeg and salt. Create a well in the middle.
3. Add in the greek yogurt, cornstarch, milk, and vanilla. Mix everything together until combined. Put in your diced apples.
4. Pour your batter into a baking pan (ours was 9 x 13″). Bake for 30 – 40 minutes until golden apple-ly brown.
5. Let cool, and chomp away
Mmmm….warm moist apple cake with a nice cup of hot apple cider, nothing better than this on a cold windy autumn day. We were going to add a crumble or icing topping but we were too antsy and ready to take a bite out of it so we decided against it. The cake itself wasn’t very sweet so even if we did decide to add a crumble on top or some icing, it would of been just fine. It literally tasted like a cake version of apple pie! So delicious! We have yet to get our hands on some pumpkiny goodness though…the anticipation continues…
