Double chocolate cookie sticks + ice cream sandwich round 2 (vegan)

After a few days of gloomy skies, the Vancouver sun has come out to play again! Yay! Today, lil’ bun and I decided to make cookie sticks to have with our ice cream because we thought that it would be super yum that way. I mean you dip savory bread sticks in marinara sauce so why not make a sweet version of the savory snack? If I ever end up opening a cafe one day far off in the future….I think I’m going to have to put these on the menu because not only did they scrumptious but they looked yummlicious in dessert presentation too! Lil’ bun had hers with berry frozen yogurt and I had mine with my banana “ice cream” because we felt like we needed to try to be “healthier” with one of the treats so we’d feel less guilty about indulging. (:

Ingredients:
1 1/3 cup whole wheat flour
1/4 teaspoons baking powder
3 teaspoons cocoa powder
1/8 teaspoon salt
2 tablespoon coconut oil
1 tablespoon ground flax + 3 tablespoons water or 1 egg
1 teaspoon vanilla extract
1/2 cup honey or agave
1/2 cup yogurt or chocolate chips

1. Combine the flour, baking powder, salt, coconut oil, honey and vanilla into a bowl.
2. Stir in the flax egg, and yogurt/chocolate chips until a batter forms.
3. Roll the dough out into a rectangle and transfer it onto a baking sheet.
4. Bake at 325F for 8 – 10 minutes until golden on the bottom.
5. Munch alone…or with ice cream!

We also decided to sandwich some frozen yogurt between two cookie sticks to make ice cream sandwiches and they turned out great since the cookies were thin this time compared to theĀ vegan ice cream sandwiches we made last time.
